Food trucks hit the mainstream a few years back and the boom isn’t over. There are new chuck wagons gassing up every day in Houston with cheesy puns for names branded on all sides. How are we supposed to keep up especially when they’re on the move at the drop if a hat? Try following them on Twitter, Facebook, or Instagram to see where they are now and where they’ll be dropping anchor in the near future.
In honor of the 2015 Best Damn Food Truck Festival Ever, which is in fact just one of Houston’s food truck festivals, is a short list of the trucks you should be on high alert for:

Many a dollar was spent at the Waffle Bus when they posted up at UH, and when I did the math I realized “Oh, that’s why I couldn’t afford to go on vacation in college.” Not that The Waffle Bus is too pricy, I’m just better at ordering food than I am at budgeting. You know, now that I think about it, who needs Dollywood? That’s money you could be shelling out on the ultimate sweet and savory combination, the Buttermilk Fried Chicken & Waffle. The waffles are sweet, crispy, and fresh from the iron and the chicken is crunchy and evens out the sugary goodness. Maybe you’re a purist, you’re saying, “Excuse me, I’d rather keep my sweets sweet.” Yeah, okay, they also have just straight up waffle based desserts too.

Grandma’s cookies. What could be better? How about premium ice cream nestled in between two of those chewy bad boys? Okay, but nothing else crazy, right? Just regular ice cream toppings: sprinkles, coconut, strawberry jam, b-b-b-BACON. The entire internet might have bacon fatigue, but my tum-tum does not. The beauty of Smoosh is customizing your own ice cream sandwich masterpiece. Here’s mine, it is great: White chocolate chip macadamia nut cookies, butter pecan ice cream, bacon, maple syrup. Thankfully Smoosh Cookies will be featured at The Best Damn Food Truck Festival Ever, Saturday July 18th at NRG Park.

There’s pretty much no such thing as bad pizza, but great pizza? That’s hard to pull off. I did my time serving up slices for a local pizza joint so I was spoiled by premium toppings and specialties for years, which in turn makes me a pizza snob. My bad. Here’s the thing, Pi Pizza Truck is a local pizza joint on wheels and their from scratch attitude almost blindingly shines through but it’s the ‘anything can make a pizza’ philosophy that creates an almost child-like awe, making this truck special. Like most food trucks Pi’s menu changes pretty frequently, but if you are lucky enough to go when they have The Colonel you owe it to yourself to get as many slices of it as they will sell you. This pie is topped with fried chicken, gravy, mashed potatoes, and the audacious nature of human kind.
